Chilled Watermelon Salad – Feta, Toasted Almonds & Aged Balsamic
Serves 4
- 3 cups seedless watermelon cubed
- 2 cups honeydew cubed
- 1 cup feta cheese crumbled
- ½ cup toasted sliced almonds
- ¼ cup aged balsamic vinegar
- 1 bunch chopped mint
- Cracked black pepper to taste
Chill melons after dicing (melons need to be ice cold).
Serve with feta, mint, almonds and black pepper directly on top of melons.
